Cereals in general supply about sixty per cent of the total protein consumed in Indian This dependence on cereals for protein will continue for a long time as the animal proteins at present are very scarce and expensive. From the nutritional standpoint cereal proteins, however, are reported to be inferior to those of animal source owing to the deficiencies in the proportions of essential amino acids like lysine, threonine and tryptophan.
