Abstract
Safflower (Carthamus tinctorius L.) is an important oilseed crop producing quality oil rich in polyunsaturated fatty acids which helps in reducing cholesterol level in blood. Safflower also produces flowers which are used as a natural source of edible colours and exhibit several medicinal properties to cure chronic diseases like hypertension, cardiovascular diseases, arthritis, spondylosis, menstrual cycle and fertility disorders.
